Grain-Free Bulk Bin Breakfast
I love apples and cinnamon and I used these two ingredients as the base for a yummy, filling breakfast that you can make quickly and that will keep you satisfied for hours. I’m not precise with recipes; I like to use them more as suggestions for creating something that sounds appealing to me. So, use my Bulk Bin Breakfast as a guide for creating something delicious that you will love.
- 1 organic apple, chopped
- 2-3 teaspoons coconut oil
- 1 teaspoon cinnamon
- 1-2 teaspoons raw honey (optional)
Melt the coconut oil and honey in a saucepan over med low heat. Add the chopped apple and cinnamon and toss to coat (you’re not cooking that apple; just melt the coconut oil).
Now comes the fun part. Add anything else that looks good to you. I love gathering items from the bulk bins at my grocery store. Some suggestions are:
- Chopped walnuts
- Raw coconut flakes
- Heart of hemp seeds
- Chopped dates
- Chia seeds (soak 1 T of seeds in about ¼ c of almond milk for at least 5 min)
- Salted sunflower seeds
- Raw pumpkin seeds
- Ground flax seeds
- Chopped prunes
You can eat this all on it’s own. Or, you can add a scoop of this cinnamon/fruit/nut/seed mixture to your morning oatmeal or cooked buckwheat cereal. It can also be made in large batches and refrigerated. I sometimes even find myself eating it as a dessert!
